Thanksgiving at The Beer Thrillers household usually means one thing: yes, the kids are arguing over who gets the wishbone, the pies are cooling on the counter, and the Macy’s parade is droning in the background — but most importantly, a Pennsylvania craft beer is getting cracked and poured into whatever dish I’m cooking. Because if you’re not using local beer in your holiday feast… what are you doing?

This year, we’re going with a full-on PA-powered centerpiece: a Maple–Brown Ale Glazed Turkey, roasted low and slow, basted in a malty, caramel-rich glaze made with one of Pennsylvania’s best fall beers: Troegs’ Troegenator Doppelbock or Victory’s Festbier (both work beautifully and are easy to find statewide). The result is a turkey that’s juicy, glossy, sweet, savory, and unapologetically Pennsylvanian.

Below is the complete recipe, along with a few craft-beer-pairing side suggestions to turn your Thanksgiving table into a full flight of PA brew goodness.

Beer Recommendation

Pick one of these PA craft beers depending on your flavor goals:

• Troegs Troegenator Doppelbock – Dark fruit, caramel, toffee; slightly sweet.
  Perfect for a deep, rich, almost BBQ-like glaze.

• Victory Festbier – Clean, bready, slightly sweet malt.
  Lighter, more delicate, but still beautifully malty.

• Weyerbacher Merry Monks – If you want a more Belgian, fruity twist.

For the recipe below, I’ll assume Troegenator, because very little says “Pennsylvania in November” more than that purple-labeled doppelbock.

Ingredients

The Turkey

• 1 whole turkey (12–16 lbs), thawed

• 2 tbsp kosher salt

• 1 tbsp black pepper

• 1 tbsp smoked paprika

• 2 tsp garlic powder

• 1 tsp dried thyme

• 1 tsp dried sage

• Olive oil or melted butter (2–3 tbsp)

Aromatics (for inside the turkey)

• 1 orange, quartered

• 1 small onion, halved

• 3–4 garlic cloves

• Fresh rosemary, thyme, and sage

The Beer–Maple Glaze

• 1 ½ cups Troegenator Doppelbock (or your PA beer of choice)

• ½ cup pure Pennsylvania maple syrup

• ¼ cup apple cider

• 2 tbsp soy sauce

• 2 tbsp Dijon mustard

• 1 tbsp brown sugar

• 3 tbsp butter

• Pinch of salt & pepper

Instructions

1. Prep the Turkey

1. Remove giblets and pat the turkey dry.

2. Mix the salt, pepper, paprika, garlic powder, thyme, and sage.

3. Rub the turkey generously with olive oil or butter, then coat with the seasoning blend.

4. Stuff the cavity with the orange, onion, garlic, and herbs.

5. Place on a roasting rack in a large pan.

2. Make the Beer Glaze

1. In a medium saucepan, combine Troegenator, maple syrup, cider, soy sauce, Dijon, and brown sugar.

2. Bring to a simmer and reduce by roughly one-third (about 15–20 minutes).

3. Whisk in the butter until glossy.

4. Remove from heat and set aside — it will thicken slightly as it cools.

This stuff smells like caramelized heaven. Resist the urge to drink it.

3. Roast the Turkey

1. Preheat oven to 325°F.

2. Roast the turkey uncovered for 1 hour.

3. Start basting with the beer glaze every 20–30 minutes.

4. Continue roasting until the internal temperature hits 165°F in the thickest part of the thigh (usually about 3–3.5 more hours).

5. If the bird is browning too quickly, tent with foil.

Your kitchen will smell like a brewery decided to host Thanksgiving. This is a good thing.

4. Finish & Rest

When the turkey reaches temp, remove from oven and let it rest 20–30 minutes before carving. Brush once more with warmed glaze for that Instagram-ready shine.

Flavor Notes (Because This Is The Beer Thrillers)

A Troegenator glaze gives you:

• Deep caramelized sugar from the doppelbock malt

• Notes of date, fig, and dark fruit

• Rich mahogany color

• A slightly sticky, sweet–savory crust

• Incredible drippings for gravy

If you go with Victory Festbier instead, the turkey comes out lighter and more bready-malt forward — still spectacular, just less intense.

Suggested Pennsylvania Craft Beer Pairings

Serve your turkey with any of these PA craft beer gems:

• Troegs Blizzard of Hops – juicy, bright, seasonal, balances the turkey’s sweetness

• Neshaminy Creek Shape of Hops to Come – for hopheads who want bitterness with the rich glaze

• Rotunda Cran-Gose (Annville) – tart, salty, and the sleeper hit of the meal

• Imprint’s Schmoojee Cranberry variants – dessert in a glass, but pairs amazingly well

Bonus: “Beer in Every Side” Pairing Ideas

Because why stop at the turkey?

Hop-Infused Mashed Potatoes

Stir ½ cup of slightly warmed Troegs Sunshine Pilsner into your mashed potatoes with butter and cream — it adds a grassy, herbal brightness.

Brown Ale Stuffing

Use Lancaster Brewing’s Winter Warmer or Yards Brawler in your stuffing liquid. Absolute game-changer.

Stout Sweet Potatoes

Glaze roasted sweet potatoes with Yuengling Hershey’s Chocolate Porter (still PA! still craft-adjacent enough!). Chocolate + sweet potato = chef’s kiss. (If you have any left. They stopped making this two years ago. A good new substitute would be Troegs Chocolate Elf.)

Final Thoughts: A Thanksgiving Made the PA Way

Troegs Brewing Releasing Second Cut DIPA

Back in October of 2023 we announced that Troegs Brewing would be releasing a “Double Cut” version of First Cut, and its finally time for the release. Welcome to Second Cut DIPA. The newest scheduled ‘once a year’ or ‘yearly’ release by Troegs Brewing in their DIPA (Double IPA) series. Second Cut will be releasing on April 22nd, 2024. (Perfectly in time for Earth Day.)

Unlike the above original label image, the Second Cut DIPA will be coming in at 8.5% ABV rather than 9.5%. It will be a Double IPA and is based off the Scratch 507 formula and recipe. It is a double version of First Cut IPA – so expect bright flavorful notes of Mango.

The newest DIPA to hit Troegs Brewery is an amplified version of First Cut IPA. A mango hoppy IPA that is a fan favorite at the brewery that sees just brewery release (and in this year’s fashion also limited local distribution). Second Cut DIPA will be seeing distribution as is befitting a new ‘once a year’ beer at Troegs. Expect it out on the markets starting on April 22nd, gradually hitting the further away markets as the days go by.

Second Cut DIPA is similar in how Troegs has released Double Nugget Nectar and Double Perpetual IPA. (Look for Double Perpetual IPA to be making a return later this year as well.)

First Cut

From our previous article – Second Cut DIPA Releasing This Spring – here are the notes of First Cut. Expect this x2 for Second Cut IPA:

The First Cut is a fan favorite and has a bit of a ‘cult following’ at the brewery. It is a 6.2% IPA – American style, with 45 IBU. Its typically released late February to early March each year at the brewery in Hershey. It has over 52,000 ratings on Untappd with a global average rating of 3.79 (as of 10.13.23). The Untappd description reads: Each spring, hop growers dust off their pruning shears and trim the first shoots, bolstering the bines for a rich growing season. First Cut – a mouthful of silky Simcoe and a touch of mango – is a nod to this ritual, without which the world would be a less hoppy place.

Second Cut DIPA Releasing This Spring – First Cut Notes

Second Cut Mango DIPA will be releasing on April 22nd, 2024 at the brewery as well as in distribution. The brewery opens at 11:30AM Monday, April 22nd, 2024. Second Cut will come in four packs of 16 oz pounder cans, and in cases. It will also be on draft in the store. There could potentially be sixtels for sale for customers as well. There is currently no listed limits for the purchases, and online sales of the beer will go live at 11:30AM as well.

(A lot of vintage and variants get consolidated into single unique listings as well.) They have 2.3 Million ratings and as of 4.18.24 have a global average rating of 3.79. Their Untappd bio reads:

Troegs Brewing and Dewey Beer Releasing a Collaboration – Adventure Was Promised

As part of their new ‘collaboration’ series this year – Troegs Brewing will be teaming up with Dewey Beer Company to release a new DIPA – Adventure was Promised. Previously made in Dewey (by Dewey Beer and Troegs Brewing) it was a TIPA (Triple IPA). This year’s release will be a DIPA and is being brewed in Hershey at the Troegs Brewery.

Troegs Brewing is doing a series of IPAs that are collaborations this year. They started with a “self collaboration” of Snowy White IPA, and they will be later teaming up with Warwick Farms Brewing, Tonewood Brewing, Sworn Brewing, AntiFragile Brewing, Free Will Brewing, and others. Adventure Was Promised will be a 7.6% DIPA using Cashmere and Citra hops. Brewed on the brew deck at Troegs Brewery with the crew from Dewey Beer Co. It will be released in 16 oz pounder cans, and will see a limited distribution run. Mostly limited to the areas near Troegs Brewery and Dewey’s breweries. It will also be on draft for a limited time as well.

Its August 1st…

Its August 1st…. and so you know what that means…. its time for Oktoberfest! Yes, it doesn’t seem as ridiculous as it sounds. Firstly – Germany celebrates Oktoberfest in September, and secondly, distribution and sales and marketing dictates release dates – not the Pennsylvanian weather.

The Mad Elf has been put away, Christmas in July is over, and now its time to bring out the Oktoberfest. The next great season of the calendar year is upon us.

The general store at Tröegs is cleared out of the Mad Elf, the Mad Elf Grand Cru, and all of the other Christmas in July items and drinks, and now in comes the Oktoberfest, soon will come in Hop Cyclone, and the fall season starts to begin to get underway at Tröegs Brewery.

Tröegs Oktoberfest

By boiling a portion of the mash, we create a bright, dry maltiness.

Tröegs Oktoberfest is 6.1% ABV – not too high and not too low either. The lager is true to its origins, a good toasty lager that would make any Bavarian happy. Brewer tasting notes for the Oktoberfest are caramel, toasted oats, sweet caramel, fresh baked bread, and flowering herbs.

Troegs Independent Craft Brewing collaborated with German artist David Leutert to make the can label and some of the artwork on merchandise. They have also collaborated with another artist for the tee shirts that will be released to celebrate the Oktoberfest season. Leutert took inspiration from the Bavarian flag and the traditional bier halls of Bavaria to create the design. Festzelte is the Bavarian bier gardens that you see traditionally in pop culture with the tents and the white and blue everywhere.

Lagers

Troegs Brewing has several lagers to scratch any lager fan’s itch. They have the year round Troegenator Double Bock, they have the Sunshine Pilsner, they also currently have When in Doubt (a helles lager) and they’ve had some recent scratch lagers – Scratch 491 and 496 in particular. The Oktoberfest Lager joins their Long Live Lagers celebration series.

Oktoberfest Lager can be found in 12-oz bottles and 12-oz cans. You can use their Tröegs Brew Finder to find it.

Troegs Independent Craft Brewing has announced that their yearly Oktoberfest will be ten days this year. Running from September 14th to September 24th. They will have beer releases, as well as new merchandise for the event, and of course German authentic food and steins as well.

Its Hot Out There – Time For a Beer

Its hot out there – and today has been no exception – here at The Beer Thrillers HQ its 95 degrees with a real feel of 100 – 102 degrees (Fahrenheit). So whats the best way to cool off? Grabbing a delicious, refreshing beer from one of our favorite breweries here in Pennsylvania of course!

So with it being the hot summer months – the dog days of summer as some would call it – I decided to come up with a list of some of the best Pennsylvania breweries with some refreshing summer offerings.

Summer is here, and that means it’s time to enjoy some great craft beers. Pennsylvania is home to some of the best breweries in the country, and many of them brew a variety of summer beers that are perfect for enjoying on a hot day.

In this article, we will take a look at some of the best Pennsylvania breweries for summer beers. We will discuss the different types of summer beers that are available, and we will recommend some of the best beers from each brewery.

Types of Summer Beers

There are many different types of summer beers available, but some of the most popular include:

Pale Ale

Pale ales are a great choice for summer because they are light and refreshing. They are typically brewed with a variety of hops, which gives them a citrusy or fruity flavor.

IPAs

IPAs are another popular choice for summer. They are hoppier than pale ales, but they are still light enough to enjoy on a hot day. IPAs come in a variety of styles, so there is sure to be one that you will enjoy.

Tröegs Independent Craft Brewing is a large brewery located in Hershey, Pennsylvania. They brew a wide variety of beers, including many summer favorites. Some of their most popular summer beers include Perpetual IPA, Dream Weaver, Sunshine Pils, Nimble Giant IPA, and their hop cyclone series – Hopora IPA, Lollihop IPA, and Field Study IPA.

Victory Brewing Company

Victory is another large brewery located in Downingtown, Pennsylvania. They brew a wide variety of beers, including many summer favorites. Some of their most popular summer beers include Summer Love Pale Ale, Dirt Wolf IPA, and Golden Monkey Belgian Tripel. As well as Cloud Walker IPA and the sour version of Golden Monkey – Sour Monkey.

Forest and Main Brewing Company

Snitz Creek Brewing Company located in Lebanon, Pennsylvania, and they brew a wide variety of beers, including many German-style beers. However, they also brew some great summer beers, such as Kolsch, Helles, and Hefeweizen. They have a fantastic lemon and blueberry sour, and have done some shandies and radlers in the past.

Troegs Brewing Company Introduces Hopora IPA

Troegs Brewing Company has introduced Hopora IPA – their newest seasonal beer as part of their Hop Cyclone Series. Releasing today when the brewery opens, Hopora IPA is a 6.2% ABV Hazy tribute to all things Hops.

Hopora is a tribute to the hop spirit for a bountiful crop. Built on pale malt, oats and wheat, this IPA showcases Solero hops. Radiant notes of tropical citrus are supported by grapefruit rind and subtle pine from Citra and Chinook. Immerse yourself in the juicy aura of our crisp seasonal ale.

Troegs.com – Hopora IPA

Tröegs Independent Brewing announced the release of Hopora IPA, a new offering in its popular Hop Cycle series of rotating IPAs. It joined seasonal fan – favorites Field Study, Hop Cyclone, and Blizzard of Hops.

A tribute to the hop spirit for a bountiful crop, Hopora was designed to showcase the radiant tropical fruit and citrus notes of Solero hops, the Hershey-based brewery said in a press release on Monday.

Troegs Independent Craft Brewing Company has been long known for making some remarkable IPAs; seasonal and year round, as well as one off scratch releases. Some ‘hall of fame’ favorites from the local community are Nimble Giant, Perpetual IPA, Lollihop, Blizzard of Hops (and its bigger, bolder, badder cousin Double Blizzard of Hops), Field Study, Cultivator, Crimson Pistil, Hop Horizon, Hop Knife, etc, etc, etc.

Troegs Brewing Company is set to hit their 26 year anniversary this week as well, and will also be re – releasing their original Pale Ale as well.

Hip Hip Hopora

Hopora IPA releases today – July 17th – at the Troegs Brewery in Hershey Pennsylvania, and will be going out to all the distributors as well. It comes in both cans and bottles, and will also be featured in their upcoming sampler package including Perpetual IPA, Oktoberfest, and Lollihop.

I like to think Hopora captures the best of both IPA worlds – West Coast and hazy. It’s got just the right amount of bitterness that rolls into tropical aromas with notes of mango and passionfruit. Plus, it’s super tasty and the name is fun to say… HOPORA!

Built on a backbone of pale malt, oats and wheat, Hopora IPA clocks in at 6.2% alcohol by volume. Citra and Chinook hops round out the hop bill with supporting notes of grapefruit rind and subtle pine.

Like many of Tröegs’ recent beers, Hopora was developed through its three-barrel “Scratch Lab” brewhouse and fermentation tanks.

With the Scratch Lab, we can break up 15 – barrel brews into smaller trials. It has allowed us to test things like dry-hop combinations and yeast strains side-by-side at a faster rate. We used to have to wait a few weeks between batches.

Clusterduck (with Strawberries) by Ever Grain Brewing Company

Ok, It’s been warm enough here in Central PA and we are past the peak of summer solstice; what is your summer beer go to?  I picked up this Clusterduck (with strawberries) by Ever Grain Brewing Company with the thought of drinking this on the back porch after a summer rain.  It rained and stormed, or at least the part of town we were in it did, so I thought It was time to crack this open. 

According to Untapped Clusterduck with Strawberry is a 7% IPA -other.  It comes with a 3.86 rating which is low for the quality of beer Clusterduck gives you. 

I mean we have a 1.0 rating and the description is “I’m still not an IPA chick…that cleaner taste.”  These ratings should, in no way, indicate the quality of this fruited IPA.  Also, I know a lot of us are spoiled with the double and the tripled IPA but this just tone it down a bit.  A nice 7% fruited IPA is perfect on the back porch, while the baby finally went to sleep, and a light IPA can help you handle the rest of your Sunday evening.  There was a tad of sediment on the bottom of the can, but this can be expected with a fruited beer.  Let’s be honest, we expect this with no qualms when it’s our favorite fruited sour. 

Popular Summer Beers

According to a MyBartender.com article – 30 most popular summer beers on the market – my ol’ favorite summer, go to, Leinenkugel’s Summer Shandy makes that list. In this same article it describes the summer Shandy as the perfect companion for a barbeque or any other summer time occasion.  A barbeque beer is exactly what I think of when I think of a summer beer. 

But obviously we want to suggest some local beers to our readers so here it goes:  Boneshire Brew Works normally comes out with a “Hippo” series of fruit beers during the summer. Pink Hippo, Summer Hippo, Blue Hippo, Red Hippo and a Fall Hippo.  Pink Hippo had strawberries, Summer Hippo had peaches and mangos, Blue Hippo had blueberries, and Red Hippo had raspberries.  

Troegs Independent Craft Brewing has both Sunshine Pils and Nimble Giant we’d recommend as a summer beer.  Sunshine Pils is a nice and light Pilsner and Nimble Giant is a double New England IPA with a summer release.  Tattered Flag comes in with the “Basic Dad Pilsner” and again, its a nice and light Pilsner to enjoy on a warm and humid summer evening.  Then Moo Duck has their summer beer with the “Big Sit Summer Ale”.  Please don’t hesitate to let us know your favorite summer beer go to! The Top 50 Craft Brewing Companies in the United States

The Brewer’s Association has released their annual “Top 50 US Craft Brewing Companies“. They release this yearly, and its always a gold mine of information on what breweries are producing how much, distribution, sales, and who all is still considered ‘craft beer’ vs ‘macro beer’.

From their report:

The Brewers AssociationOpens in new window (BA)—the trade association representing small and independent¹Opens in new window  American craft brewers—today released annual production figures for the U.S. craft brewing industry.² In 2022, small and independent brewers collectively produced 24.3 million barrels of beer, on par with 2021’s numbers³, and craft’s overall beer market share by volume grew to 13.2%, up from 13.1% the previous year. 

The overall beer market* shrank 3% by volume in 2022. Retail dollar value was estimated at $28.46 billion, representing a 24.6% market share and 6% growth over 2021. Sales growth was stronger than volume due to pricing, share shift to smaller brewers—who are more likely to sell onsite and via distributed draught—as well as the continued channel shift back to on-premise, which has a higher average retail value. Craft brewers provided 189,413 direct jobs, a 9% increase from 2021, driven both by growth in the number of breweries and a continued shift to hospitality-focused business models.

Growth in Craft Breweries

Overall in 2022 the total number of craft breweries increased. Hitting an all time high of 9,552 breweries open in 2022.

The number of operating craft breweries continued to climb in 2022, reaching an all-time high of 9,552, including 2,035 microbreweries, 3,418 brewpubs, 3,838 taproom breweries, and 261 regional craft breweries. The total U.S. operating brewery count was 9,709, up from 9,384 in 2021. Throughout the year, there were 549 new brewery openings and 319 closings. Openings decreased for a second consecutive year, with the continued decline reflecting a more mature market. The closing rate increased in 2022 but continued to remain relatively low, at approximately 3%.

Of the top 50 overall brewing companies in 2022, 40 were small and independent craft brewing companies.⁴ 

“Breweries that managed to move up the list organically are often those that are adding incremental growth to the category,” said Watson. “Both beer and craft need to create new occasions and new beer lovers to find growth.”
