The summer heat always seems to bring with it a certain craving. Something cold. Something crisp. Something easy-drinking but still flavorful enough to be worth your time. For years that spot has been filled by kölsches, pilsners, and the endless tide of hazy IPAs. But this summer—and possibly the next big wave in craft beer—American breweries are looking East for inspiration.

The newest darling in brewhouses across the country? Japanese-style rice lagers.

Craft Brewers Are All In On Japanese Rice Lagers


What Is a Japanese Rice Lager?

For those unfamiliar, a Japanese rice lager is exactly what it sounds like: a lager brewed with rice in the grain bill. The rice lightens the body, smooths out the flavor, and creates an exceptionally crisp finish. Think of it as the beer equivalent of clean lines and minimalist design—subtle, refreshing, and deceptively simple.

Unlike the heavy malt sweetness of some lagers, or the hop assault of many IPAs, rice lagers aim for balance. They don’t shout, they whisper—and in that restraint is where they shine.

According to a recent Forbes piece (link below), breweries big and small are leaning into this style because it fits the current beer climate perfectly:

  1. Sessionable & Light – At a time when many drinkers are shying away from 9% triple IPAs and pastry stouts that drink like desserts, a light lager is refreshing in more ways than one.

  2. Broad Appeal – The approachable profile means both hardcore beer nerds and casual drinkers can enjoy it side by side.

  3. Economic Sense – With the industry feeling the pinch from rising ingredient costs, rice lagers provide a cost-effective option that still feels premium.

  4. Something Different – After a decade-plus of IPA dominance, many beer fans are looking for the next thing.

It’s no surprise breweries are jumping in. This style scratches all the right itches: familiar yet exotic, light but still crafted with care, drinkable without being boring.


Breweries Embracing the Trend

Walk into your favorite local taproom and you might already see a rice lager pouring—or at least announced on a chalkboard as “coming soon.” Some are going traditional, aiming for clean precision. Others are riffing with citrus additions, dry-hopping, or pairing the style with regional ingredients.

It reminds me of the early days of the hazy IPA craze. First came the traditional forms, then came the wild experimentation. Don’t be surprised if by next summer you’re drinking a dry-hopped jasmine rice lager with lime zest.

For us, the ones sitting on patios, at breweries, or around fire pits with friends—the rise of rice lagers is a win. It means we have a new option when we want something lighter but still crafted with intent. It’s a style that doesn’t demand your full attention, but rewards you when you give it.

Starting this weekend, Lakefront Brewery welcomes some of the best local musicians for stripped-down performances on their perfectly-suited patio space.

Current Sounds

It’s been 3 years since Lakefront completed work on their award-winning patio renovation and they’re excited to continue to find ways to celebrate it. Current Sounds is a brand new music series that will feature unique performances from musical artists ready to pull back the curtain and provide a special experience for Lakefront’s patio guests.

 

“There is a wide variety of eclectic musicians that we’re lucky to have”, says Sean Anderson, local musician and Lakefront Brewery tour guide who handles all music booking for the brewery. “It was fun to offer such a serene and special spot for the artists to get creative and in some cases, push the boundaries of the shows they’re used to playing”.

 

Current Sounds is free to attend and will occur every Saturday from 2pm to 4pm starting this Saturday May 24th through August 30th, with two special Sunday performances: this weekend ahead of Memorial Day, and Labor Day weekend. Friday performances will be from 3pm to 5pm and begin on June 13th. All Friday performances are a part of It’s Alive presented by the Milwaukee Theater District.

 

Grab some award-winning beer, a basket of their famous cheese curds, relax along the river, and take in the Current Sounds.

Lakefront’s flagship brew has been around for almost 38 years and has become a defining product for Milwaukee. As an ode to its resilience, Lakefront has produced a limited run of retro 12-packs featuring the original 1987 artwork.

Celebrate the legacy of Riverwest Stein with Lakefront’s one-time-only throwback 12-pack!  Lakefront Brewery co-founders Russ and Jim Klisch delivered the first keg of Riverwest Stein Amber Lager to the Gordon Park Pub on Weil Street for its official release on December 2nd, 1987. Now called Nessun Dorma, the brothers still celebrate annually at the Riverwest staple for the brewery’s anniversary.

 

Before the Gordon Park Pub beer release, Jim had taken a photo of Clarke Street looking east with St. Casimir Church in the background to produce table tents for the event. “A quintessential street view of Riverwest”, as Jim puts it, “I think a local artist who went by the name ‘Peggy Riverwest’ converted it into a line drawing which we used at its grand unveiling.”

 

“It wasn’t until 1990 that I built a one-headed filler so we could start to bottle”, said his brother Russ, Owner and President of Lakefront Brewery, “we had a family friend named Linda Goehre who used the design to create our 16 oz. bottle labels which is more or less what you’ll see on these cans”.

 

Lakefront is excited to offer this fun tribute to Milwaukee’s favorite craft beer in hopes that it will allow people to feel young again or just look really cool with one in hand. Longtime craft beer advocate Randy Mosher ended up redesigning the Stein label when it moved to 12 oz. bottles. More recently, it was reimagined by Lakefront’s late Brand Manager, Michael Stodola.

 

“I think back to when I first heard of arguments at bars about our Riverwest Stein being the best beer in town, that’s when I started to realize that we might have something special here,” says Owner Russ Klisch.

Lakefront Brewery revamps a retired hot dog cart to add Curds à la Carte to their mobile food fleet, providing access to their famous award-winning fried cheese curds for private events.

Lakefront is excited to announce the launch of their Curds à la Carte for off-site private events. You may have seen Lakefront’s CurdWagon food truck servicing patio guests all summer long at Lakefront Brewery. Due to demand at the brewery itself, the CurdWagon is rarely found in the wild. As requests for it continue to come in, Lakefront’s Executive Chef, Kristin Hueneke, remembered a hot dog cart from days gone by.

Curds a la Carte Appetizers

“Back in 2018, we had outgrown the hot dog cart and replaced it with the CurdWagon”, says Hueneke, “the cart has been collecting dust in storage since then, so after a deep clean and a stylish refurbishing, we’ve got it ready for a grand homecoming. It’s exciting for us to be able to provide an affordable and unique catering experience to the local area”, added Hueneke.

 

Curds à la Carte is available every day of the week from Memorial Day to Labor Day. It will provide single serving appetizers to those looking to impress their party guests with a true taste of Milwaukee. Curds à la Carte can serve up to 250 guests for graduation parties, weddings, showers, birthdays, and corporate events. It can be booked with a server to provide passed appetizers and a selection of gluten-free menu items are also available.

In an effort to help end period poverty, the brewery is offering gift card credit in exchange for much needed period supplies.

Lakefront Brewery’s Period Drive 2025

Lakefront Brewery is proud to announce the return of its 3rd Annual Period Supply Drive, held in partnership with Milwaukee Diaper Mission, on Sunday, May 4th, from 11am to 5pm. Lakefront aims to surpass previous collections and help Milwaukee Diaper Mission continue the vital work of combating period poverty in the Milwaukee area. Since launching its first Period Supply Drive in 2023, Lakefront has collected nearly 17,000 period products at various events. Their 2024 drive alone brought in 6,275 products, making it Milwaukee Diaper Mission’s top period supply drive event for that year. With your support, they hope to collect even more this year.

 

To encourage donations, Lakefront Brewery will be offering $0.25 in gift card credit for each individual disposable pad or tampon donated, redeemable in their Beer Hall that day or during any future visit. There is no limit to the amount you can donate; the more you give, the more you get back.

 

Two in five menstruators have struggled to purchase period products in the past year due to a lack of income. Milwaukee Diaper Mission is a nonprofit basic needs bank that distributes essentials like period products through a network of trusted local social service agencies. With a 50% increase in demand over the past year, the organization now serves 1,800 menstruators and needs support to continue meeting a growing need.

 

What to Donate:


Milwaukee Diaper Mission accepts all period products, but super absorbent and overnight varieties are needed most. Only unopened packages will be accepted, and gift card credit will be provided for tampons and pads only.

The brewery that brought the country its first Certified Gluten-Free beer, New Grist, brings forth the Midwest’s largest gluten-free food festival, Maifest, now in its 4th year.

Lakefront Brewery’s Maifest 2025

In 2005, Lakefront Brewery brewed New Grist Pilsner, the nation’s first Certified Gluten-Free beer. What started out as an accommodation for local celiacs, has grown to supply over half the country with gluten-free beer options. Over the years, Lakefront began to understand how underserved the regional gluten-free community was. Their first Maifest was an instant success, since then, they’ve released an IPA version of their New Grist and converted their CurdWagon food truck to be exclusively gluten-free. Now in its 4th year, Lakefront is focusing their Maifest efforts to celebrate gluten-free food offerings.

Lakefront’s Maifest

On Sunday, May 18th, from 11am to 3pm, Lakefront invites everyone, gluten intolerant or not, to come down to their premiere springtime outdoor festival and embrace the incoming warm weather. Over 30 vendors will be featuring all gluten-free food items, and these 9 delicious food trucks will be serving exclusively gluten-free menus:

Ø  Lakefront’s CurdWagon (including the gluten-free version of their famous fried cheese curds)

Ø  Clean Cruisine

The Maifest

As one should expect, Lakefront will be serving up all their gluten-free New Grist varieties on top of the popular gluten-free cask beers made specially for this event:

Maifest will also be supporting Gluten Intolerance Group (with Cutting Costs for Celiacs) and the Celiac Disease Center at Children’s Wisconsin with a 50/50 raffle. Saunter through Milwaukee’s longest patio, take in the breathtaking views, and enjoy live music from Shotski Polka as you sip and nosh on the area’s best gluten-free goodies. Maifest is a family-friendly, free, rain or shine event and welcomes well-behaved pups to attend if they’re interested.

Over 400 years of German brewing tradition meets Milwaukee’s pioneering craft beer expertise in a transatlantic partnership.

LANDMARK COLLABORATION FOR BOTH BREWERIES

One of Germany’s most renowned breweries is joining forces with one of America’s premier lager producers to create a special collaboration brew: Bräu Buddies. Hofbräu München and Milwaukee’s Lakefront Brewery have partnered to craft a rustic German-style lager, featuring Vienna and Melanoidin malts that deliver a freshly toasted biscuit aroma, moderate sweetness, and a smooth, medium-light body.

The idea for Bräu Buddies was first conceived last year during a conversation between Lakefront, Hofbräu, and Julian Kegel of Kegel’s Inn, the historic West Allis-based German restaurant. Kegel was interested in a collaboration for their 100th anniversary. To formulate the brew, Lakefront Brewery’s Head Brewer, Luther Paul, traveled to Munich to develop the recipe alongside Hofbräu’s expert brewers to ensure a true-to-tradition rustic lager. Now, a year later, the much-anticipated brew is ready to hit the shelves. Starting this month, six packs will be available at retailers in Wisconsin, Colorado, Florida, Illinois, Indiana, Iowa, Kansas, Maryland, Massachusetts, Minnesota, Missouri, New York, New Jersey, North Dakota, Pennsylvania, and South Carolina.

Brau Buddies

Hofbräu München and Lakefront Brewery have had many local partnerships in the past. With the quality German-style beers that Lakefront has brewed, many of them were launched at the Old German Beer Hall or at the Estabrook Beer Garden with the support of owner and Hofbräu representative, Hans Weissgerber lll. A trusted relationship developed over the years between Lakefront and Weissgerber, who supported this collaboration and helped bring it to fruition.

“Collaborating with one of the world’s most legendary breweries is an incredible honor,” said Russ Klisch, Owner and President of Lakefront Brewery. “I consider this one of the most significant moments for our brewery.”

“Our Bräu Buddies collaboration represents the deep-rooted friendships that beer fosters – between breweries, between cultures, between two great brewing cities, and between the people who share it,” said Steve Ksycki, CEO of Hofbräuhaus of America. “This beer is a true symbol of what can be achieved when brewers come together, and we’re excited to get to do this with our friends from Lakefront.”

To celebrate this collaboration, Lakefront Brewery and Hofbräu München have teamed up with great Milwaukee establishments to mark the release of this collaboration:

  • Friday, April 4th – The Old German Beer Hall will tap a complimentary keg of Bräu Buddies for patrons, starting at 6 PM.
  •  Saturday, April 26th – Kegel’s Inn will feature Bräu Buddies at Bock Fest, a signature celebration of German beer culture.
  • Saturday, May 3rd – The Estabrook Park Beer Garden celebrates the 2025 season with its annual Maifest Weekend and Grand Opening Celebration May 2 through 4. Lakefront and Hofbräu Munich Breweries will tap a wooden keg of their first ever collaboration beer, Bräu Buddies, at noon on Saturday May 3rd. Enjoy free beer from the keg while it lasts!

The Lakefront Brewery Beer Hall will serve Bräu Buddies throughout April and May, featuring an exclusive commemorative pint glass created for the collaboration. Guests can purchase and keep the glass with a Bräu Buddies full pour for $10. The glass will also be available for purchase without the beer.
