As a service and a resource to all of our readers, we are creating a full list of all of the breweries in the United States. Starting with Maine and working geographically we are planning on getting all 50 states done, as well as all territories and districts, as well as a fun map of all of the breweries we personally have been to. We are then planning to combine them all into one large map of all of America.

Who knows, if I’m not completely brain dead by the endeavor afterwards I might do Canada and Mexico as well, and then work our way through other countries.

I’m sure nearly as soon as I get each state done new breweries will open and old ones will close. So I am going to need some help from everyone to keeping these up to date. If you notice any breweries missing or ones that have closed, please let us know. Thank you so very much.

Exploring the Surprising History of Black Henbane in Brewing

Craft beer today may pack a punch, but imagine drinking a brew so potent it caused hallucinations! In medieval Europe, that was a real risk. The culprit? A plant known as black henbane, or Hyoscyamus niger. This notorious nightshade family member was intentionally added to ales for its intoxicating—and sometimes frightening—effects.

The Strange Brew of Black Henbane

Before hops became the flavoring standard, medieval brewers often experimented with an array of herbs and plants, known collectively as “gruit.” Black henbane was a go-to ingredient in some regions. Its effects were intense: the plant could create a strong buzz, quicken inebriation, and even produce sensations far beyond ordinary drunkenness. For brewers, this meant happy (if slightly unhinged) patrons, thirsty for more. But the line between a good time and a hazardous experience was thin; just a bit too much henbane could lead to hallucinations and even dangerous health effects.

One peculiar trait of black henbane made it especially problematic: it causes a severe dry mouth. With every sip, drinkers grew thirstier, often downing pint after pint. For a 14th-century partygoer, that might sound ideal—until the hallucinations set in.

How Henbane Lost Its Place in Beer History

By the early 1500s, the popularity of henbane-laced beer started to fade. Germany’s Beer Purity Law of 1516, or Reinheitsgebot, officially banned the use of ingredients like black henbane in favor of hops, which was safer, more affordable, and improved shelf life. Hops soon became the norm, and henbane was left behind, though not without lingering whispers of witchcraft and mysticism.

Since women often brewed beer, they were sometimes associated with the plant’s “magical” properties and faced accusations of witchcraft. In his 1827 Homeopathic Materia Medica, William Boericke even described the henbane experience as one of “mania,” highlighting its disturbing, almost diabolical effects.

While black henbane is best known for its wild effects in beer, it was also valued for its medicinal properties. Civilizations from ancient Greece to Persia used it in small doses to treat chronic pain, insomnia, epilepsy, and more. Although modern medicine has retained certain henbane compounds like hyoscyamine, it remains a toxic substance and should only be used under medical supervision.

The Safer—and Tastier—Alternative: Hops

Luckily, today’s brewers stick with hops, giving us beers that satisfy without the risk of hallucinations or worse. Curious about gruit ales? While they’re rare, a few craft breweries experiment with gruit-inspired recipes (minus the henbane, of course). It’s a fascinating throwback to the days before hops reigned supreme.

Next time you crack open a beer, raise a glass to hops and the steady hands of modern brewers. And if the idea of a henbane-laced ale has piqued your interest, remember: medieval brews were risky business. Hops not only bring bitterness but also a refreshing peace of mind—a perfect companion for today’s craft beer scene.

Cellar Works Brewing Announces Closure On 10.26

Unfortunately more bad news in the brewing industry and the brewing world, and specifically for Cellar Works Brewing. Cellar Works Brewing has announced that they will be closing – completely – on October 26th. They announced the closing of Cooper Station back in January of 2023 (January 24th, 2023). Yesterday on social media, Cellar Works Brewing announced the difficult decision. They announced that unfortunately, with heavy hearts, they had to make the extremely difficult decision to close, and they announced that the last day of service would be the 26th of October. (We just announced on Monday that Englewood Brewing will be ceasing their restaurant operations for the remainder of 2024; whilst still continuing to brew, and to host events and to use their coffee shop.)

Cellar Works Brewing is located at 110 S Pike Rd #205, Sarver, PA 16055. Cellar Works Brewing was open, with locations in Verona, Saxonburg, and Sarver; collectively for seven and a half years.

Cellar Works Brewing posted yesterday (10.15.24) this announcement via social media:

In a year full of difficult announcements, this one is the hardest. With extremely heavy hearts, we’re announcing the closure of Cellar Works Brewing. Our final service will be Saturday October 26.
Reflecting on the past 7 and a half years, we have a lot to be proud of. We’ve made a lot of great beers – some even won very prestigious awards. Each iteration of our kitchen has knocked our socks off with incredible dishes. One thing we’re particularly proud of is our relationship with the community. Sarver and Saxonburg welcomed us and we did what we could to give back. We will treasure the many friendships we’ve made, especially those with our Cellar Society members past and present whose support kept us going during the very difficult pandemic years.
After the pandemic, we could never really regain the traction we had in 2019 and our attempts to expand were poorly timed to say the least. It’s impossible for anyone to understand how much we’ve sacrificed to make CWBCo exist. However, there comes a time when we have to stop sacrificing and start to focus on ourselves. Therein lies the silver lining. We now have an opportunity to step away from the stresses of operating a business to have more time to focus on our families.
Someone once told me that its obvious which people open a brewery because they think they’ll get rich and which ones open a brewery because they’re passionate about beer. My only hope is that our passion for beer was obvious.

Vineland, NJ, is set to welcome a new player in the craft beer world—Wander Back Beerworks. This new brewery is poised to become a key part of the South Jersey craft beer community, making it only the second brewery in Cumberland County alongside the well-known Glasstown Brewing Company in Millville.

Wander Back Beerworks is gearing up to launch in late May, starting strong with two flagship brews: the Wanderback Lager and the Perfectly Cromulent IPA. Before opening their much-anticipated tasting room, the brewery plans to self-distribute its beers across several counties, including Atlantic, Camden, Cape May, Cumberland, and Gloucester.

What makes Wander Back Beerworks particularly exciting is the team behind it—three seasoned veterans of the brewing industry who are well-known in the local craft beer scene. Christopher Henke, one of the original founders of Cape May Brewing Company, is partnering with Cape May’s first head brewer, Brian Hink, and former general manager of sales and distribution, Justin Vitti. Together, these three bring over 33 years of combined brewing and distribution experience to their new venture in Cumberland County.

Reflecting on his unexpected return to brewing, Henke shared in a press release, “I had no plans to go back to brewing. Opening another brewery was never on my radar. But when these guys approached me, it felt like a moment straight out of Back to the Future—how could I say no?”

While the tasting room in Vineland is still in the works, Wander Back Beerworks has found a temporary home for brewing at Hidden Sands Brewing Co.’s facility in Egg Harbor Township.

Hops, scientifically known as Humulus lupulus, are perennial plants in the Cannabaceae family, which interestingly includes cannabis. Of the many cool things that Japan has—anime, cars, Godzilla—beer vending machines should be included on the list as well. They’re easy to use and are almost everywhere, from rural communities to large cities. The machines are everywhere, from train stations to alleys, offering all brands and types of Japanese made beers.


It was a long road for Japan to have beer as easily available as a sports drink. In fact, there was nothing inevitable about beer being made in Japan at all. Brewing was how tea, sake and soy sauce were made. Beer did not come to Japan until very late in its history, during the 1800s. Once it arrived, beer slowly became enmeshed in Japanese society and culture with brands that are now recognized around the world.


Before Kirin, Asahi and Sapporo became global brands, beer was what the resident foreigners in Japan drank. As Jeffrey Alexander writes in his book, Brewed in Japan, Europeans and Americans imported and brewed small batches to remind themselves of their home countries. But the first reaction of the Japanese to beer’s taste was…harsh. A high-level official in the Japanese emperor’s court named the drink “bitter horse-piss wine.”

Despite the strong reaction of some Japanese consumers, beer as an imported drink became fashionable as an exotic Western item when the nation opened itself to trade from the rest of the world. Germans were key to Japan’s embrace of beer, but only after the Dutch and the Americans had made crucial inroads. The Dutch were the first to bring beer to Japan and made it available to the Japanese when playing newly fashionable games of billiards and badminton. Japanese soon began to buy beer to drink after meals, viewing it as an aid to digestion. Drinking beer as a refreshment grew quickly among the Japanese consumer with the establishment of domestic brewing in Japan. An American, William Copeland, (a Norwegian immigrant who was born Johan Martinius Thoresen) helped lay the foundation for brewing beer in Japan during the 1870s. His Spring Valley Brewery adhered very closely to the reinheitsgebot of German brewing traditions and would eventually become Kirin Brewery.

Charting these beginnings and moving through to today, the author uses his Japanese language skills to plow through company records from Japan’s breweries and documents from governmental archives to reveal how beer, primarily lagers, steadily displaced sake as the preferred Japanese drink. The development of a uniquely Japanese “dry” style of lager is also covered and how it launched Japan as a powerhouse beer exporter. The book also includes some rare examples of printed vintage Japanese beer advertisements; the artwork on the cover of the book comes from a 1920 Sapporo beer poster. This level of in-depth research makes the book an exceptionally valuable resource.

Although it is an academic book, it is largely an accessible read with many fascinating parts. The sections on the early Japanese dependence on German brewing traditions and ingredients as well as the American occupation of Japan after World War II are especially absorbing. An updated edition of the book might include more about Japan’s craft beer industry. With over 600 craft breweries, the Japanese desire for beer styles other than lager has been slowly cutting into the market share of the historically dominant, larger domestic breweries.

Japanese craft beer is available in many parts of the United States, but it is hard to find, while Japanese rice lager was a brief trend among some American craft breweries. As the history of beer in Japan has shown, there are few barriers for Japan to continue to create new beers and bring them to the world.

Lahaina – Royal Capital of the Hawaiian Kingdom

“Our Lahaina!”

“Our Lahaina!” My sister’s text hit me like a shovel to the back of my head. The town was gone. Just gone. Although my sister and I grew up on the island of Oahu, home to Honolulu and Waikiki, we had walked down Front Street of Lāhainā just before the onset of the pandemic. It was my final evening in my home state after visiting every brewery on four different islands as part of my book, Hawai’I Beer: A History of Brewing in Paradise.


We strolled down the streets of the first capital of the Kingdom of Hawaiʻi under the shade of a 150 year old Banyan tree the length of a street block, eventually making it to the stonewall as the waves of the Pacific lapped against it. The fire has wiped out the shops where we browsed and the restaurant where we ate dinner. The Banyan tree might survive; the stonewall is now remembered for where people leapt over it to seek refuge in the ocean from the firestorm.


Hundreds of people are still unaccounted for, meaning the death toll will climb above the current number of 114. Over 2000 buildings no longer exist. Those were homes, churches, museums and businesses. Among the businesses that have been lost are breweries.

“Maui deserved good beer” is what Garrett Marrero, the president and CEO of Maui Brewing Company, said during the interview for my book when I asked why Maui was a good place to start his brewery. He has been one of the strongest community members leading the recovery efforts. His brewery locations all survived. The same cannot be said of Waikiki Brewing Company’s Lāhainā location. Kohola Brewing Company was also completely destroyed. I remember its taproom vividly—the small bar near big warehouse doors is where I chatted with two tourists from Wisconsin about the travels for my book. A cool driftwood coffee table was off to the side. The photos Kohola posted on Instagram of their ruined brewery make me queasy. I can’t bear to remember it that way. And, as a one-time brewery owner, I can empathize with how much of the hard work and love of Kohola’s owners and staff put in to create a special place.

“Kohola” is the Hawaiian word for humpback whale and whales dive deep then inhale as they resurface. I have no doubt that Kohola and Maui as a whole will breathe and resurface.

Maui Brewing Company has started a national, international “Kōkua” brew, a beer with a recipe that Maui Brewing designed and supplied. “Kōkua” is Hawaiian for “extending support and cooperation.” Any brewery can participate. Welcome to our first of the brewer interview series that I am introducing to the blog. This is going to be a new section to the blog that will include interviews with head brewers, assistant brewers, beer scientists, home brewers, fellow beer bloggers, and other craft beer industry workers. This has long been a segment and series I wanted to introduce to the blog, but finally got off the ground. Our very first interviewee for the segment is Tyler Budwash of Pilger Ruh Brewing. Tyler is a great guy, I’ve gotten to know him through helping out with Tattered Flag’s canning line where Pilger Ruh has done a few collaborations, as well as several brewfests, Ffej of July, and discussing Civil War battlefields with him; as well as the Central PA Whalerz.

 

Our interviews will follow a pretty simplistic and easy formula for everyone we interview. Topics will be introduced in bold and underline, questions will be asked in bold, and answers will be in regular font. TBT stands for The Beer Thrillers. The interviewee’s name will be initialized in his answers. (Example: TB = Tyler Budwash).

 

 

Starting off with the simple, softball, questions:

TBT: What is your name and do you currently work for a brewery?

TB:  My name is Tyler Budwash, I currently work for the Social Security Administration, but will also be working at my brewery when we open.

 

TBT: What is your brewing background?

TB: I got into homebrewing in early 2012 (Mr Beer Kit). At the time I wasn’t aware that alot of extract beer is kind of gross the way it is so I had some okay beers but quite a few misses before I got into all grain brewing in 2013 or so. I then stopped brewing all together in late 2014 as I was preparing to have my first child and didn’t get back into it until 2017. Both Conyngham Brewing and Rotunda let me come in and collab on some beers for my fest (Schuylkill County Brew Fest) and I haven’t looked back since.

 

TBT: What are your interests in and out of the industry?

TB: Pro Wrestling, history, weight lifting, Carolina Panther Football, coordinating events.

 

TBT: How did you get into beer? What were your ‘starting beer’ days like? What were the first craft breweries you tasted / visited?

TB: My starting beers were Miller Lite, Yuengling Lager, Budweiser, and Hurricanes. Some of the first “craft beers” I got into at the time were Sam Adams, Magic Hat, and Saranac..I always got variety packs to try as many different beers as I could. This was pre – Untappd days so I wasn’t even getting any check-ins/badges! As far as actual breweries that I first visited…it’d have to be ABC in Harrisburg, Troegs, and a brew pub in Myrtle Beach that’s now closed called Liberty. ABC and Troegs definitely got me more into the scene. I ended up going to a ton of beer fests just to see what else was out there. I had no idea there were as many PA breweries as there were and this was back in 2013.

 

TBT: How did you get into brewing?

TB: The love of beer, beer fests, and starting my own festival all gave me the itch.

Brewing Specific:

 

TBT: What is / will be your full job at Pilger Ruh Brewing?

TB: We didn’t give ourselves any fancy titles yet, but I’ll be Co-Owner/Brewmaster? I’ll basically be running the day to day activities (brew/personnel scheduling, event coordinating, ordering etc) while our other Co-Owner Tony Deppen is more of the big picture. My brother Conlan Budwash will take the Head Brewer position and he’s also a minority owner.

 

TBT: What do you like to brew? What styles do you like most?

TB: I like brewing stouts, whether it’s going to be heavily adjuncted or straight up. I also like brewing Pilsners, they’re not an easy beer to brew so I enjoyed the challenge.I’m going to sound just like every other beer boi out there right now but I enjoy my hazy IPAs and fruited sours, but again my palate had come full circle and I’m enjoying alot of Pilsners, hefeweizens, and kolsches as of late.

 

TBT: Who are some of your favorite current brewers and breweries? What do you like about them, why do you like them, etc?

TB: This is a loaded question. Favorite brewers? My favorite brewers are the friends I’ve made over the last couple years, so it’d  be Dave Morrow (Chatty Monks), Justin Hoak (Tattered Flag), Derek Wolf (Wolf Brewing), Brad Moyer( Liquid Noise), and Eric Stubbs (Rotunda). I’ve been picking their brains for years now and they’ve all been nothing but great to me and Pilger Ruh. Favorite breweries… I’ll do it like this. Locally I really like Tattered Flag (great beer and chicken sammiches), The Millworks (I love the not so over the top styles and of course their chicken sammiches), Hidden River (awesome beer and ambiance) , and South County (they knock everything out of the park and I miss the Gelato line beer shares). Outside of this general area I really like The Veil, Urban South Htx, Dancing Gnome, Cinderlands, Cushwa.

 

TBT: What styles do you think you do best? What are some of your hardest styles to nail down? 

TB: I’ll have to go back to stouts as the styles I do best, along with sours, and Pilsners. Believe it or not IPAs were very hard for me to nail at first (oxygen and shit). Luckily that’s no longer an issue.

 

TBT: What do you think are defining qualities of a good beer?

TB: Your water. Does it match your description?

 

TBT: What do you think are defining qualities of a good brewer?

TB: Being able to adapt, never think you know everything because you never stop learning.

 

TBT: Same vein as the last two – what do you think are defining qualities of a good brewery?

TB: Good beer, ambiance, and friendliness.

 

Pilger Ruh Brewing Specific:

TBT: Tell us about Pilger Ruh. What is Pilger Ruh Brewing? How did it form? Who all is involved? What are the plans for the brewery/etc?

TB: Pilger Ruh started when myself and 4 others wanted to start a homebrew club. At that point we were going by Keyhop Homebrew Club. One thing led to another and we found ourselves on festivals around the state.Right now, as I said earlier it’s myself, Tony Deppen, and my brother Conlan as the three owners/brewers. We have 2 others (Matt and Alex) who have been helping us along the way.Plans for the brewery, well we are going to open on a 5 barrel system in a 2400 square foot building in Pottsville PA. We’ll have 12-15 rotating taps from Milkshake IPAs to Dark Milds. We will be focusing on the popular hype beers but will have something for everyone.

 

TBT: Where do you foresee Pilger Ruh Brewing in 5, 10, 15 years from now?

TB: I hope to see ourselves growing with production, and paying off all our debts ASAP as possible. Buying a canning line. My personal goal would be to open a second location, where we’d get a bigger system.

 

COVID-19 and Beer Industry Specific:

TBT: How has COVID-19 impacted Pilger Ruh Brewing? Impacted your brewing and impacted your current work?

TB: I’ve been working from home since mid March. I actually get less work done with the brewery than I do when I’m at my office. It impacted the brewery by the cancelling of all the beer festivals, closing on our loan, but at the same time it bought us time as I wouldn’t want to open during this pandemic.

 

TBT: How do you think COVID-19 has impacted the beer industry as a whole? Specifically the craft beer market, and even more so in PA?

TB: It shows that people care about their local breweries and that you better have a crowler machine or canning line. I guess now you have to have your permit to sell food.

 

TBT: What do you think will be the big trends in the foreseeable future?

TB: People reverting back to easy drinking beers and doing everything you do to sours to some classic styles (blondes, hefes, wits).

 

TBT: What are some trends you think have benefited the craft beer industry?

TB: Seltzers, low cals, all around light beers. I feel fruited sours and IPAs bring people in, but there’s only so many you can drink. I can drink PBR all day.

 

TBT: What are some things, aspects, or trends of the craft beer industry you don’t like, or think has been a negative on the craft beer market?

TB: Oh God, well you’re in some of the same beer groups as me so you can see whatever negatives there are. I think as a brewery you always got to put your customers first, never think you’re above them or anyone. There’s lots of people making good beer, it doesn’t mean you have to be a douchebag about it.

TBT: Is there such a thing as the “craft beer bubble” and if so, do you feel like it’s going to burst – soon, in the future, or is currently happening?

TB: Are we seeing the bubble burst right now?  Look how many breweries in the last year or so that closed because they got too big too quick, got locked into a distributor contract, or there was no market for their beer. One thing I want to absolutely avoid is distribution. If we ever did distro our beer we will do it ourselves. Too big or too small may be an issue going forward.  However, I do think there could be a brewery in every other town and everyone could be successful. You have to pick the right location and know your market.

 

TBT: What are some ultimate goals you have for Pilger Ruh Brewing, for your own brewing, etc?

TB: I want to help build a community around us in Schuylkill County. We owe alot of breweries collabs, but I want to bring non beer people into the scene and get them involved. I want to show my area that a brewery like us can succeed. I want us to be able to give back to the community, make it better for others, and leave the area better than we found it.

 

TBT: What do you foresee being the big changes happening to the craft beer market in 5, 10, 15 years?

TB: More breweries getting bought out by the big guys and competing for shelf space while we sell all of our beer from our taproom. More seltzers and easy drinkers, fruited sours/hazy IPAs will still be here.

The assessment (or mid-term) was for verified track learners only; and since I’m not doing that, I’m skipping over that. So moving on, clicking the NEXT brings us to the intro video for Module Six: Steps in the Brewing Process.

The intro video is a short 3:57 long video describing what the module (the steps of beer brewing) is about. The six steps are: milling, mashing, filtration, boiling, whirlpool, and cooling and aeration. The video demonstrates (briefly and quickly) the six steps using their pilot batch brewing system, while giving little bits of information setting up the module.

Clicking next we come to a text introduction page. This page discusses the following six steps:

  • Malt milling
  • Mashing 
  • Lautering (wort filtration)
  • Wort boiling
  • Wort clarification
  • Wort cooling & aeration

There is a clickable diagram about the six processes and steps and clicking on them gives you a description, tells you what equipment is needed, how it is used, and how you proceed to the next step / process of the brewing. The diagram is full of information on the process, when hops are bittered, or grains added, when to cool the wort, etc.

Our next page is a terms and definitions page. Like the old vocabulary pages from when you were in elementary school (…hopefully you’re not still in elementary school and reading this). The terms are: attenuation, break, brewhouse efficiency, cast wort, extract, grain bill, gravity, and trub. On the course page, you click on the word and it drops down for the definition. Not going to steal the thunder of the course by providing them all here for you, but as an example – cast wort: The wort obtained after the boiling process including the hot trub.

Getting into the course module proper now, we start with MILLING. “The main objective of malt and cereal milling is to convert the kernels into finely ground and milled particles.” (Edx: The Science of Beer Brewing: Module Six). This page gives you information on DRY and WET milling, with picture diagrams.

Moving on, the next page is MASHING. “Mashing is the most important step in the brewing process. During mashing, grist and water are mixed, leading to the solubilization of malt constituents and the action of malt-derived enzymes on the resulting mash, generating the extract. The term extract refers to the total amount of dissolved solids in the brewing water.” (Edx: The Science of Beer Brewing: Module Six). Two main types of mashing are infusion and decoction mashing. Infusion is when the mash is kept together and heated in one (singular) vessel. This can also be called ‘step mashing’ due to the changes in temperatures. This is what most home brewers do. In decoction mashing, you withdraw some mash and boil it and then pump it back in. The decoction method is better for protein breakdown, increased formation of melanoidins, increased removal of DMS, and reduced active amount of enzymes.

There is then a pull-down chart of different reactions during mashing. They are: β-glucan degradation, protein breakdown, starch degradation, and lipid conversion. Clicking on each of these would pop up more information on the topics.

The next topic is LAUTERING. “Lautering is a filtration process where the soluble part of the mash (liquid, also called wort) is separated from the insoluble part (consisting of husks and other materials).” (Edx: The Science of Beer Brewing: Module Six). This is when it starts to become ‘wort’. The page then has a chart of factors, and what a lauter tun vs. a thinbed filter does with that factor. The page then discusses how temperature and milling also affect the filtration and lautering process.

Next up is WORT BOILING. “After lautering, the wort is boiled. Wort boiling was originally done in copper or steel vessels, now more modern equipment is being used, most often made from stainless steel. Steam heating is the most commonly used way to increase wort temperature.” (Edx: The Science of Beer Brewing: Module Six). Its during the boiling process when you add the hops, spices, and similar ingredients. As we learned in the hops module, the hops and spices control the bitterness and aroma of the beer.

Once again there is a pull-tab / pull-down chart with different terms and their definitions. They are: wort sanitation, extraction and transformation of hop components, precipitation of protein-polyphenol complexes, enzyme inactivation, color increase, pH decrease, and evaporation of unwanted hop aroma compounds.

Scrolling down the page we come to the boiling equipment segment. “A boiling kettle needs to be equipped with a powerful heating system. In the past, direct heating by coal or gas was used but these types of kettles are now only rarely in use. Nowadays, steam is used for kettle heating. By boiling water, steam is produced at the same temperature as the boiling water.” (Edx: The Science of Beer Brewing: Module Six). The page then ends with a diagram of a boiling kettle with internal boiler.

Clicking next we come to Whirlpool, cooling, and aeration which leads off with an experiment before getting into the information. The page has pull-down tabs for: whirlpool, stripping, cooling, and aeration.

Next up is an expert clip by Gert De Rouck. It is a seven and a half minute clip. He discusses the brewing process. The page following this is a discussion page. The discussion page is about the disadvantages of green malt. I wrote:

“The biggest problem for any brewery is shelf life when it comes to this. And this has a very limited shelf life which is unfortunate, especially for a craft brewery where all the issues are already compounded. Local sourcing is another issue. Cost and quality is the last issue as well, especially for smaller US craft breweries.”

The next page is titled: “A Special Case – High Gravity Brewing”. “High gravity brewing  (HGB) involves using wort at higher than normal gravity, usually 15-20°P original gravity. This wort is subsequently fermented by yeast. The resulting HGB beer is diluted to desired gravity by adding CO2 impregnated water (blend water); this process is referred to as blending. This water is added immediately before, or after filtration of the beer.” (Edx: The Science of Beer Brewing: Module Six). Some of the effects of high gravity brewing are: increased stress conditions of yeast cells, head retention in final beer, potential change in beer flavor, and pH change.

After this is a super easy quiz; just two drop-and-drag questions. The next page is a discussion page where they ask everyone to post pictures of their homebrew setups. Next up is a page for verified track learners only. The pages for verified track learners are grain bill calculations, homebrewing tips, and a few other things (three pages in all).
