Ranch City Brewing to Bring Bold Brews and Artisan Fare to Easton’s Simon Silk Mill https://thebeerthrillers.com/2025/06/22/ranch-city-brewing-to-bring-bold-brews-and-artisan-fare-to-eastons-simon-silk-mill/?utm_source=rss&utm_medium=rss&utm_campaign=ranch-city-brewing-to-bring-bold-brews-and-artisan-fare-to-eastons-simon-silk-mill Sun, 22 Jun 2025 14:36:53 +0000 https://thebeerthrillers.com/?p=16441 Ranch City Brewing to Bring Bold Brews and Artisan Fare to Easton’s Simon Silk Mill

A fresh hop-forward adventure is heading to Northampton County this July as Ranch City Brewing prepares to open its doors at the revitalized Simon Silk Mill complex. The brewery will be located at Simon Silk Mill, 1250 Simon Blvd., Easton.

Set to launch with a soft opening in the second week of July and a tentative grand opening on Saturday, July 12, Ranch City Brewing promises to be more than just another taproom—it’s aiming to be Easton’s newest destination for beer lovers and foodies alike.

Occupying the former home of Böser Geist Brewing Co., which closed in 2023 after a seven-year run, Ranch City Brewing is the brainchild of six passionate entrepreneurs: AJ and Nikki Mitchell, Dan and Daneal O’Leary, and Kyle and Cynthia Randell. Together, they’re bringing experience, energy, and community spirit to the table.

“We’re building the kind of brewery we’d want to hang out at ourselves,” said co-owner AJ Mitchell. “Whether you’re out with friends catching the game, or on a date night looking for quality food and drinks, we’ve got something for you.”

Craft Brews and Culinary Roots

At the heart of Ranch City’s beer program is Dan O’Leary, a seasoned brewer with over 15 years of experience, including stints at Blue Point Brewing, Port Jeff Brewing, and several Iron Hill Brewery locations. Dan will helm a 10-barrel brewhouse, producing a rotating lineup of styles from hoppy IPAs to rich stouts, balanced lagers, and even hard seltzers.

Expect 24 taps pouring everything from house flagships to seasonal specialties and guest beers. Highlights include:

  • Quiet Man – a silky nitro Irish dry stout

  • Soft Saddle – a crisp cream ale

  • Schitzen Giggles – a playful German pilsner

In addition to beer, Ranch City will serve local wine, craft cocktails, and a curated bourbon selection with an emphasis on Pennsylvania distilleries.

Elevated Pub Grub

Food is no afterthought here. With a chef who’s sharpened his knives in New York’s Little Italy for over two decades, Ranch City will serve an inspired menu that includes:

  • Artisan pizzas (personal and sharable)

  • Smash burgers on fresh-baked rolls

  • Cheesesteaks, chicken wings, hush puppies, bacon-wrapped shrimp

  • Twisted Tees favorites like loaded potato scoops and the “Dirty Dog” chili-cheese hot dog

As AJ puts it, “It’s all about high-quality, made-to-order food that pairs perfectly with beer.”

A Space That Blends City and Country

The renovated interior stays true to its industrial roots while weaving in rustic-modern elements—think exposed brick, corrugated metal, graffiti murals, and pendant lights hanging from rope. With seating for around 150 patrons, the vibe strikes a balance between casual comfort and visual flair.

The name Ranch City reflects the team’s diverse backgrounds—some from cityscapes, others from rural and suburban roots—and speaks to the inclusive atmosphere they’re cultivating. As co-owner Nikki Mitchell explains: “We wanted a place where everyone feels at home.”

A New Chapter at the Silk Mill

Ranch City Brewing joins a growing community at Easton’s Simon Silk Mill, which already includes local hotspots like:

  • Seven Sirens’ The Blendery

  • Easton Wine Project

  • The Tipsy Crow

  • Owowcow Creamery

  • Spectracolor Coffee Roasters

With bold brews, inventive food, and a welcoming ambiance, Ranch City Brewing is set to become a key player in the Lehigh Valley beer scene.

Human Robot Beer is shutting down their Schuykill Banks location (on May 31st) and are opening new (two to be exact) taphouses. Crime and Punishment just recently closed and it looks like the vacancy will quickly be filled by Human Robot Beer. Human Robot Brewery will move its Schuylkill Banks tasting room to the recently vacated space of Crime and Punishment Brewing Co. at 2711 W. Girard Ave. in Brewerytown. Human Robot also has plans to open a new spot in New Hope, Bucks County.

Human Robot Beer’s Announcement

The Announcement

The following is Human Robot Beer’s announcement on Instagram:

When one door closes, TWO more open!
.
While we are sad to announce that we will be leaving our @humanrobotschuylkillbanks location on May 31st, we are VERY excited to share that we will be opening TWO new tasting rooms in the very near future.
.
@humanrobotgirard is thrilled to announce our move into the former Crime & Punishment location at 2711 W. Girard ave. We are truly honored to uphold the legacy established by Mike P, Wambs, and their amazing team over the last decade. One of our very first “meetings” took place in this space, and it holds a special place in our hearts. We cherish the memories we’ve made there over so many exceptional beers and look forward to creating even more with all of you. Our hope is to get it reopened as soon as possible. Our buddy Poe will be joining us as well, follow @poessidepiece and please follow our new social for updates!
.
@doublesNH is our new concept in New Hope, PA located at 12 W. Mechanic St. This will be a slightly different spin on what we have traditionally done. For one, we are bringing in a partner, @keithashore , to help with design and art and some special extras to be announced. This is being built from the ground up, so it will take a little longer, but look for us hopefully come July. Again, follow the socials there and we will update when we can!
.
Thanks for being on this journey with us and supporting us every step of the way. More info to come!

Human Robot Brewery Expands: New Locations in Brewerytown and New Hope

Crime and Punishment’s Brewery

Human Robot Brewery is making major moves in 2025, relocating its Schuylkill Banks tasting room to Brewerytown and launching a new concept in New Hope. Here’s what beer lovers need to know about these exciting changes.

Human Robot Brewery Takes Over Crime & Punishment’s Former Space

Human Robot Brewery will soon be calling 2711 W. Girard Avenue in Brewerytown its new home. This location, previously occupied by Crime & Punishment Brewing Co. for a decade, will become Human Robot Girard, replacing the brewery’s current Schuylkill Banks outpost, which will close on May 31, 2025. The move comes after Human Robot finalized a $760,000 purchase of the building, although the deal did not include Crime & Punishment’s business or brewing licenses.

The new taproom will retain much of the character and furnishings of Crime & Punishment, with only the brewing equipment being removed to make way for additional seating. Outdoor seating will also be available, and all former Crime & Punishment staff have been offered positions at the new Human Robot location.

What to Expect at Human Robot Girard

Patrons can look forward to the brewery’s signature lagers, pilsners, and innovative brews, including the popular Milktube pours. The food menu will feature sandwiches from Poe’s Side Piece, an offshoot of Poe’s Sandwich Joint, which is already a staple at Human Robot’s flagship in West Kensington. The brewery aims to honor the legacy of Crime & Punishment while bringing its own unique flair to the neighborhood.

Expansion Continues: New Hope Location Set for Summer

In addition to its Brewerytown plans, Human Robot is preparing to open a new tasting room called Doubles at 12 W. Mechanic Street in New Hope, marking its first venture into Bucks County. This ground-up project is expected to debut in July 2025 and will offer a slightly different experience compared to the brewery’s other locations. The New Hope outpost will bring the total number of Human Robot locations to five, including existing taprooms in Kensington, Jenkintown, and East Passyunk.

Human Robot’s Growth and Legacy

Founded in 2020 by Ken Correll, Chris Roller, and Jake Atkinson, Human Robot Brewery has quickly become a Philadelphia favorite, known for its experimental approach and dedication to quality. Head brewer Andrew Foss has helped popularize the use of Czech Lukr faucets, renowned for producing a thick, creamy foam on their beers.

The End of an Era for Crime & Punishment

Crime & Punishment Brewing Co., established in 2015, became a beloved fixture in Brewerytown, crafting nearly 500 unique beers over its ten-year run. The brewery closed its doors in April 2025, leaving behind a legacy of community and creativity that Human Robot aims to honor as it steps into the space.

With these strategic expansions, Human Robot Brewery continues to cement its reputation as one of Philadelphia’s most dynamic craft beer brands, promising new experiences for fans in both Brewerytown and New Hope.

We are working on a massive project here at The Beer Thrillers. We are creating a map of all of the breweries across the United States. State by state we are adding maps of all of the different states with every brewery in each state. (We will eventually get to the US Territories, as well as the Canadian Provinces, and possibly more countries; as well as doing some fun maps like a map of all the breweries we’ve been to, and other fun maps.) You can find the brewery maps here:

We are also working on a project of creating printable and downloadable PDFs and resources to be able to check and keep track of all of the breweries you’ve been to. So stay tuned for that project once we are finished with the Brewery Maps of the US States.

Boo’s Brewing Open House

Our Open House has begun!!!
Come & stop by today, we will be serving drinks and light snacks until 11pm – we are SO excited to see everyone today! Bring your friends and family for some fun 🥳 🚒🍻

Boo’s Brewing is hosting their Open House today, March 15th, 2025. They are located at 4961 River Rd, Point Pleasant, PA 18950 (listed on Google Maps as Boo’s Firehouse Tavern). They are, as the Google Maps show, originally a tavern (or pub). They have received their brewing license this year, and have started up their own brewing. Their beers will be on tap in the upcoming weeks (hopefully by month’s end). You can follow their Facebook Page for more information on when they will have their own beers on tap.

There is not a whole lot to go on yet with them, and they don’t have a strong or huge social media presence. We will keep things updated as anything new or informative come up.

For More Information on Boo’s Brewing Co.

The following comes via Untappd.

(There is not a lot of information, even updating this page on April 5th, there is not much to add.)

They are listed as a nano brewery from Point Pleasant, PA. They have 1 unique beer listed, and just 1 rating (as of 4.5.25, updated). The rating was a 4 out of 5, and the beer was “Boo’s Big Head” a New England IPA. Their Untappd description reads: “Boo’s Brewing Co. is a gathering place for the local community, and all those who have a love for the beauty and excitement found in the natural surroundings along the banks of the Delaware River. Boo’s Brewing Co. manufactures high-quality beer onsite and sells other Pennsylvania-produced beers, wines, and distilled spirits alongside a seasonal, diverse menu.

Grist House Craft Brewery of Millvale is bringing its signature brews to Butler County with a brand-new taproom at Saxonburg’s beloved Sprankle’s Neighborhood Market on West Water Street. This exciting expansion officially opens its doors on Saturday, February 15, 2025, marking Grist House’s third dynamic location in the region. In a one-of-a-kind partnership, Grist House is teaming up with Pocha by Kye‑Won, a Korean-style eatery known for its authentic comfort food. Diners can expect a mouth-watering fusion of hearty Korean dishes and Grist House’s expertly crafted beers—served in a cozy indoor taproom or the heated patio outside.

The origins of this collaboration trace back to a successful 2023 pop-up event at Sprankle’s, which inspired both parties to seal the deal. Marketing manager Christie Massari explained, “Our pop‑up was so well‑received, we decided to make it permanent”. The new space includes an eight-seat bar, a dedicated keg storage room, and newly installed restrooms—renovations courtesy of the Sprankle family.

Opening Hours & Offerings

  • Launch Date: Saturday, February 15, 2025, from 11 a.m.–10 p.m.

  • Regular Hours:

    • Wednesday–Saturday: 11 a.m.–10 p.m.

    • Sunday: 11 a.m.–8 p.m.

  • Beverages: A rotating tap list featuring Grist House favourites and curated batch cocktails.

  • Food: Genuine Korean bites from Pocha by Kye‑Won, include dumplings handmade by a Korean grandmother in the kitchen

What the Team Said

  • Kyle Mientkiewicz, Grist House co-owner: “We’re honoured to be part of this exceptional opportunity … we can’t wait to see where this partnership will take us.”

  • Brian Eaton, co-owner: “We are thrilled…bringing a shared passion for great beer and food, creating something truly special.”

  • Kye‑Won Doyle, Pocha chef/owner: “I want everyone walking through the doors to feel like they’re eating at my dining room table.”

  • Doug Sprankle, Market owner: “From the new tap system to expansion of the kitchen… this corner of our Market will surely lift a glass and give a toast to a fine local craft brew!”

Berg Brewing is all set to open in Chambersburg, PA. They just posted a few hours ago at 6:25 AM about ‘having all their t’s crossed’ and ready to go. They will be located in Chambersburg Pennsylvania; alongside GearHouse Brewing, TBC Brewing, and Maxie’s Brewhouse.

This was their post on Facebook from 2 hours ago:

We’ve officially dotted every “i” and crossed every “t,” and we’re thrilled to announce we’re moving in to 100 South Main Street! 🍻🏠
A huge thank you for your patience while we kept things under wraps to make sure this could be our permanent spot (we owe you all a pint)! 🍺 Special shoutout to @_maneandco for partnering with us on the space and build-out—y’all are the best!
Stay tuned for updates as we settle in and start collaborating with our fantastic neighbors (looking at you, @neighborsfoodhall 🤩). 2025 is shaping up to be an epic year, and we can’t wait to raise a glass with you soon!

In a year where we have seen far more brewery closings than brewery openings, its so great to see some growth still happening in the industry. Check back with us as we have a more in-depth report on their opening.
