You ever walk into a room that’s heavy with history? That’s the vibe when you step into Grist House Command, the newest spot from Grist House Craft Brewery, tucked inside what was once a Cold War-era Nike missile command center in Collier Township. This isn’t your typical craft beer launch—it’s a full-on story, a place where aviation relics meet hazy IPAs and dog-friendly patios.

From Military Mission to Malt Mission

Originally built in 1957 and activated in 1960 to guard Pittsburgh from aerial threats, the massive bunker—known as PI-62—sat quietly on one of the highest points in Allegheny County for decades. Now, it’s being reborn, with the heart of a brewery beating where a radar once blinked.

Grand Opening: September 6–7

Clear your calendar: Saturday, September 6, 2025, from 11 a.m. to 10 p.m., marks the grand opening, followed by a Sunday session from 11 a.m. to 8 p.m. Expect to walk into something that’s equal parts blast from the past and cutting-edge craft beer haven.

What’s On Tap (Literally and Figuratively)

  • A 30-barrel brewhouse right on-site—hello, more core favorites and adventurous new brews

  • Four bars, each pouring from 24 taps—yes, that’s 96 taps total waiting to be conquered
  • Indoor seating for around 140, plus three dog-friendly decks to accommodate up to 300 patio-loving patrons
  • A full kitchen dishing out family recipe–inspired fare that pairs just as well with conversation as it does with the suds
  • History on display—glimpse photos, signage, and memorabilia from the bunker’s military days, where former service members are encouraged to drop by and reminisce over a pint

Why This Spot Matters

Co-owner Brian Eaton, along with partner Kyle Mientkiewicz, took over the property back in 2018, and today their vision is turning one of Pittsburgh’s hidden high-ground pieces into a landmark—beverage-style. While Grist House’s Millvale location started life in a repurposed slaughterhouse back in 2014, this new command-post-style taproom is something else—a bold next chapter with 30,000-barrel potential per year, compared to the current 2,500.

This place isn’t just beer-adjacent history—it’s built on it. And in a beer market that’s pretty crowded, there’s no better way to stand out than by honoring the past while embracing the present.

For the last few months, we’ve been working on a pretty rad joint venture project with our friends at YAH Brew…
We are stoked to announce that we have the keys and begun the next stage of bringing this amazing space back to life in Middletown, PA!
We will launch a multifaceted community space that will allow us to use the brewery for both of our brands as well as our collaborative new brand and taproom. We also plan to create a cooperative production facility for other breweries to share and expand their brewing and canning needs and foresee a distillery brand arising in 2026….
All in all, we can’t be more excited about this project and partnering with Justin and Aimee from YAH Brew. More details to follow in the coming weeks…..

YAH Brew and Cartel Brewing and Blending Team Up

Two of Central PA’s most creative brewing minds are joining forces to breathe new life into a familiar location in Dauphin County — and beer fans have plenty to be excited about.

Back in July, YAH Brew made waves when they announced plans to take over the former home of Tattered Flag Brewery at 1 South Union Street in Middletown, Pennsylvania. The 5,000-square-foot space, which had sat idle since Tattered Flag closed its doors in late 2023 due to rising inflation and labor challenges, is now being transformed into something bold, collaborative, and community-driven.

But the story just got even more interesting.

Earlier today, Cartel Brewing & Blending announced via social media that they’re officially partnering with YAH Brew on the Middletown project — turning the solo endeavor into a full-blown joint venture between two of the region’s most experimental breweries.

“For the last few months, we’ve been working on a pretty rad joint venture project with our friends at YAH Brew,” Cartel wrote in a Facebook post. “We are stoked to announce that we have the keys and begun the next stage of bringing this amazing space back to life in Middletown, PA!”

According to both breweries, the revitalized space will serve multiple purposes: an event venue, a collaborative brewing hub, and a future home for a distilling operation.

What to Expect from the New YAH Brew x Cartel Project

  • Event Venue – The updated venue is designed to host a variety of gatherings, from retirement parties and birthdays to corporate events and wedding receptions. With a large open floor plan and Yah Brew’s nostalgic flair, the space promises a unique, relaxed vibe for private functions.

  • Shared Brewing & Canning Facility – In a move that underscores the cooperative spirit of craft beer, the site will also operate as a production facility for both Yah Brew and Cartel Brewing, helping both brands expand their brewing and canning capabilities.

  • Future Distillery in 2026 – Cartel hinted at an exciting long-term vision: the creation of a new distillery brand housed within the same space. While details are still emerging, this points toward a multi-beverage future for the Middletown location.

A Second Life for a Storied Building

For locals and longtime fans of the Central PA beer scene, the building at 1 S. Union Street holds a lot of history. Once home to Tattered Flag Brewery — a veteran-owned favorite that helped put Middletown on the craft beer map — the space now enters a new era with two ambitious and community-focused breweries at the helm.

This collaboration is more than just a shared address; it’s a symbol of what can happen when independent brewers unite, pool their resources, and think beyond the pint glass.

We’ll be keeping tabs on developments as the project evolves — including grand opening dates, beer releases, and any sneak peeks into the distilling side of things.

Brewery Brewing and Blending is Expanding with the Safe House Opening in Manheim PA

Cartel Brewing and Blending is expanding into Manheim PA with the opening of their brand new location – The Safe House. Which will be located at 26 E High St, Manheim, PA 17545.

They are elevated dive bar, a public house, “a local spot that is welcome to all, a tribute to our past and present that will be part of our future, a concept that is lacking but desired, a small footprint in an underserved part of our great county, where affordable bar food and beverage takes priority, where prices may flirt with more nostalgic times, where over 8,000 locals can call home and many more can come visit whenever they please

– Cartel Brewing and Blending

This will be their second location. After they recently moved out of their old location (now the home of Truth Beer) and moved into the former Thirst and Hunger location.

Cartel Brewing is revitalizing one of the most historic buildings in Manheim—the town’s original firehouse. To preserve its character, the brewery is partnering with the local historical board to ensure the renovation respects the building’s legacy. Township officials have been supportive throughout the process, even stepping in to streamline approvals and offer assistance where needed.

The upcoming taproom, named The Safe House, aims to deliver a laid-back, welcoming vibe. Designed to accommodate between 40 and 60 guests, the space will feature a 14-seat bar and a compact but satisfying menu—expect options like paninis, smash burgers, and possibly Philly cheesesteaks. Outdoor seating is also in the works, and Cartel is excited to bring back affordable pours, with pints potentially priced at just $2–$3.

Although there won’t be brewing equipment on-site, all the beer served at The Safe House will be brewed fresh at Cartel’s main location in Lancaster, located at 920 Landis Avenue.

Expect a late Fall / Winter 2025 opening date for their newest venue.

Rubber Soul Brewing to Open New Taproom Saturday

This Saturday – June 22nd, 2024, Rubber Soul Brewing is set to open their brand new taproom on North Hanover Street, in Hummelstown PA.

After quite a while building the brand new building (and not without some town controversy) the opening is right around the corner. The new taproom will also host their brewery in the lower level (visible from the giant parking lot). Their original location will now just be a full restaurant and taproom. (See: A Sneak Peek at Rubber Soul Brewery.)

Original Location

Rubber Soul Brewing was originally intending to open their first location in Hummelstown around March of 2020, but with the pandemic, things got pushed back, and they finally held their grand opening in October of 2020. Their current location is in the old Hummelstown Police and Borough Building, located at 136 S Hanover St, Hummelstown, PA 17036.

The current plan for the original location is that they have removed the brewing production from the location to their new brewery facility and taproom, and extending the seating and restaurant.

The new location is located at 17 N Hanover St, Hummelstown, PA 17036, just 0.3 miles north of their current taproom (on the same street). The new facility took over an old warehouse that formerly sat on the property, as well as Maritza’s House of Style, which they had removed for extra parking. The new taproom has their brewing facility on the lower level, and the upper level features a deck and patio area that faces the 7-11 across the street and some abandoned buildings / businesses.

Hummelstown is currently in the midst of a big tourism push, including the mayor, the governor, and other officials and board members (some of which are involved with Rubber Soul Brewing). At a town meeting where they got permission to bulldoze the Maritza House of Style (despite having full ownership technically as per law at the time), Rubber Soul Brewing stated that their parking lot would be usable by the public for events in town including the parades, carnivals, as well as parking for other Main Street square activities (2nd Friday’s, Memorial Day, etc.)

The old warehouse which was removed was listed as 17 North Hanover Street. As per their Facebook post their brewery’s address will be “21 North Hanover Street”.
Rubber Soul Brewing Company was originally a brewery located in Salisbury Maryland. They were bought and are now owned by Ghost Brewing LLC. They were bought whole-stock, meaning the equipment, recipes, and social media passcodes and usage were all part of their purchase.

The expansion news continues in Central PA (and Pennsylvania beer in general). Michaux Brewing just announced that they will be expanding into Gettysburg, adding a taproom there. It was just two years ago they opened their current location (July 3rd 2022). (Michaux Brewing Grand Opening.) Its great to see them expanding in less than two years, and into a wonderful beer city. Gettysburg is currently home to Fourscore Beer Co and Pilger Ruh Brewing. (As well as having had Tattered Flag and Appalachian Brewing Company there.) (Pilger Ruh Brewing Expanding into Gettysburg)

We are excited to officially announce that Michaux Brewing Company is expanding! We will be opening a second location in downtown Gettysburg this summer! After months of planning and a lot of help from our friends and family, the space is looking great. Our official opening date is still TBD, but we will be sure to keep you updated!

Brink Brewing Co. Expands Production and Patio Space in Cincinnati’s College Hill

Brink Brewing Co., an award-winning Cincinnati craft brewery, is nearing completion of a significant expansion at its College Hill location. The project includes a new production space, a dedicated canning line, a barrel-aging room, and a larger patio, with construction expected to wrap up this summer.

Located at 5905 Hamilton Ave., Brink Brewing is expanding into the adjacent building at 5909 Hamilton Ave., adding an additional 2,400 square feet to its current 3,200-square-foot space. This expansion will enable the brewery to significantly boost its production capacity and packaging capabilities.

Brink initially considered expanding outside College Hill, but after discussions with the College Hill Community Urban Redevelopment Corporation (CHCURC), they decided to keep the investment local. According to Andrew McCleese, founder and director of operations, “We explored opening a second location, but the costs were high. Instead, we opted to grow right here in College Hill.”

The brewery officially purchased the adjacent building in September 2023, and construction began shortly after. The $300,000 project includes a $180,000 investment in new equipment like a canning labeler, palletizer, walk-in cooler, and pallet stacker. The expansion is expected to allow Brink to produce 85% of its beer in-house, up from just 30% in previous years.

Production Boost and Future Plans

In 2023, Brink Brewing produced 1,200 barrels of beer, ranking as the 18th-largest brewery in the Cincinnati area. With the new canning line and additional space, the brewery plans to produce up to 900 barrels in-house, continuing its relationship with Impact Brewing for contract brewing of its flagship IPA and core brands.

“We’re leaving room to add more tanks in the future if needed,” said McCleese. “This expansion gives us flexibility to grow our production and canning operations as demand increases.”

Increased Distribution and Visibility

Thanks to a new partnership with Heidelberg Distributing, Brink Brewing has significantly expanded its brand presence. The brewery’s products can now be found in Great American Ball Park and at major events like Taste of Cincinnati, further boosting its visibility in the region.

Brink has also seen success in retail, securing placements in 72 Kroger stores by 2021, alongside multiple awards, including three consecutive Great American Beer Festival gold medals for its Moozie milk stout. The brewery has been recognized as the Best Very Small Brewery in the United States two years in a row.

Expanded Patio and Community Growth

Brink’s expansion isn’t just about production. Its patio space is doubling in size to 3,000 square feet, providing a more inviting space for guests. This upgrade is part of a collaboration with CHCURC and Cincinnati’s outdoor improvement program.

“We were one of the first businesses to invest in College Hill when there wasn’t much happening here,” said McCleese. “It’s been incredible to grow alongside the neighborhood.”

Brink Brewing Co. opened its doors in 2017, founded by Jack Duncan, Mark Landers, and Kelly Montgomery, who turned a homebrewing hobby into an award-winning brewery. McCleese, a long-time friend, joined early on, helping the brewery maintain its focus on small-batch, organic growth.
